The menu
Every service runs five dishes. Three are always on the board. The last two come from the rotation, chosen when we plan your event — including a vegetarian option as standard.
How it's made
The pasta is made fresh, not bought in. That's the whole point of the setup — your guests watch it happen and eat it minutes later.
Flour, eggs, water. Mixed, rested, rolled and cut for your service — not the day before.
Real tomatoes cooked down on the day. No jars, no shortcuts in the sauce.
Pecorino and parmesan brought in from Italy, grated to order.
